Place butter into a medium size saucepan and melt.
Add in the Plain Flour and stir to create the rue. Cook this out for approximately 2 minutes.
Reduce heat to a medium and slowly add milk. Every time milk is added, stir with a wooden spoon to fully incorporate (sauce will be lumpy if milk is added to fast)
Once all the milk has been added, stir continuously until the sauce comes to the boil. Simmer for 2 minutes and season with salt and white pepper.
Try something else… To make a Bechamel sauce, add 100g of mozzarella cheese and 100g of tasty cheese after the sauce has simmered.
