- 250g shredded cooked chicken breast
Ingredients
| 12 slices (3 slices per serve) Wise Wheat Hi-Fibre White Sliced Loaf |
| 8 slices bacon |
| 4 tablespoons mayonnaise |
| 2 tablespoons pesto |
| 2 large tomatoes sliced |
| 4 slices or your favourite cheese |
| Green leaf lettuce or romaine lettuce |
| Bamboo skewers or toothpicks |
Method
- Toast all slices of bread until lightly golden, set aside.
- Fry bacon until just crispy and place on paper towel.
- In a small bowl mix the mayonnaise with pesto.
- Spread the mayo and pesto mix onto one side of all slices of toast.
- To stack, lay out one toasted slice with mayo and pesto mix facing upwards. Add on top the tomato sliced, shredded chicken, cheese slice, lettuce and bacon.
- Place second toasted slice on top, with mayo and pesto mix facing upwards.
- Repeat the ingredient layering
- Place third toasted slide on top, with may and pesto mix facing downwards.
- Secure your triple decker sandwich with a bamboo skewer or large toothpick to hold everything in place, then cut in half.
- Serve immediately.
