Pulled Pork Sliders with Rainbow Slaw

Tender pulled pork and tangy slaw tucked into Wise Wheat Hi-Fibre Seeded Rolls or White Rolls that are high in natural prebiotic fibre and a source of protein, delivering the perfect balance of juicy, smoky and fresh.

Ingredients

2 packs of Wise Wheat Hi-Fibre Seeded Rolls or White Rolls (available at Woolworths stores with an in-store bakery)
500g ready-to-use Pulled Pork (found in the meat chiller section at major supermarkets)
300g pack of shredded rainbow coleslaw
1 bunch of fresh parsley
1 small packet of fresh rocket

Ingredients for the dressing

  1. 2 tablespoons (40g) Greek yoghurt
  2. 1/2 teaspoon (5g) Dijon mustard
  3. 1/2 teaspoon (5g) freshly squeezed lemon juice
  4. Salt and freshly grated pepper to season

Method

  1. Heat pulled pork as per pack instructions.
  2. Combine the dressing ingredients in a large bowl.
  3. Add rainbow coleslaw to the dressing mix and toss well.
  4. Cut Wise Wheat Hi-Fibre Rolls in half and toast.
  5. Top roughly with 3 tablespoons of the shredded pulled pork.
  6. Add a layer of the rainbow coleslaw. 
  7. Repeat with the remaining bread rolls and serve immediately.

Tips & Tricks

  1. Mix the rainbow slaw with the dressing right before assembling the sliders to keep it crisp and crunchy.
  2. Lightly toast the inside of the Wise Wheat Hi-Fibre Rolls before assembling to add texture and help them hold up to the saucy filling.
  3. When assembling, place a layer of rocket or slaw under the pulled pork to act as a barrier that stops moisture from soaking into the Wise Wheat Hi-Fibre Rolls.

Variations

  1. Sweet & tangy Hawaiian twist.  Layer the sliders with grilled pineapple rings and a drizzle of teriyaki glaze.
  2. Smokey bacon and pickle crunch.  Top the sliders with crispy bacon and thinly sliced pickles for an irresistible mix of salty, tangy and smoky flavours.
  3. Spice it up.  Finish with sliced fresh chilli or jalapenos for extra kick.
