Ingredients
| 1 pack Wise Wheat Hi-Fibre White Rolls (available at Woolworths stores with an in-store bakery) |
| 2 crumbed and ready to cook schnitzels from your deli counter (or you can prepare your own from scratch) |
| 2 slices Swiss cheese |
| 30g Dijonnaise mustard |
| 1 large tomato diced |
| 1 red onion thinly sliced |
| 1 small packet of rocket |
| ¼ cup oil for frying |
Method
- Fry schnitzel in batches in a medium hot pan using oil.
- Fry for 5 minutes on each side or until cooked through and golden-brown appearance.
- Place schnitzels onto paper towel.
- Slice bread rolls in half and generously spread the Dijonnaise mustard to both halves.
- Build a stack with Swiss cheese, red onion rings, rocket, diced tomatoes and place the schnitzel on top.
- Add the second half of the roll to the stack.
- Serve immediately.
Tips & Tricks
- Get the Perfect Golden Crunch. For extra crispiness, fry schnitzels in hot oil (around 170–180°C) so they turn golden without soaking up excess oil.
- Rest the schnitzel before assembling. Allow the friend schnitzel to rest for 2-3 minutes on paper towel before building your roll. This helps the coating stay crisp and prevents steam from making the bread roll soggy.
- Season smart. Lightly season the schnitzel right after frying whilst it’s still hot – the salt sticks better!
