Juicy, crunchy schnitzel meets creamy Dijonnaise and crisp rocket using Wise Wheat Hi-Fibre White Rolls — high in fibre, high in natural prebiotic fibre, and packed with satisfying flavour and crunch.

Ingredients

1 pack Wise Wheat Hi-Fibre White Rolls (available at Woolworths stores with an in-store bakery)
2 crumbed and ready to cook schnitzels from your deli counter (or you can prepare your own from scratch)
2 slices Swiss cheese
30g Dijonnaise mustard
1 large tomato diced
1 red onion thinly sliced
1 small packet of rocket
¼ cup oil for frying

Method

  1. Fry schnitzel in batches in a medium hot pan using oil.
  2. Fry for 5 minutes on each side or until cooked through and golden-brown appearance.
  3. Place schnitzels onto paper towel.
  4. Slice bread rolls in half and generously spread the Dijonnaise mustard to both halves.
  5. Build a stack with Swiss cheese, red onion rings, rocket, diced tomatoes and place the schnitzel on top.
  6. Add the second half of the roll to the stack.
  7. Serve immediately.

Tips & Tricks

  1. Get the Perfect Golden Crunch.  For extra crispiness, fry schnitzels in hot oil (around 170–180°C) so they turn golden without soaking up excess oil.
  2. Rest the schnitzel before assembling.  Allow the friend schnitzel to rest for 2-3 minutes on paper towel before building your roll.  This helps the coating stay crisp and prevents steam from making the bread roll soggy.
  3. Season smart.  Lightly season the schnitzel right after frying whilst it’s still hot – the salt sticks better!

Variations

  1. Fresh and Zesty.  Swap rocket for baby spinach, add sliced cucumber and lemon zest and finish with tzatziki for a Mediterranean twist.
  2. Smoky Upgrade.  Layer in a strip of crispy bacon and add a dollop of BBQ sauce for a smoky depth without overpowering the core flavours.
  3. Spicy Kick.  Add a layer of sriracha mayo or a dash of hot honey over the schnitzel for a fiery, sweet-spicy upgrade.

Serving Suggestions

Perfect for a hearty lunch or quick weeknight dinner, this schnitzel roll is satisfying, fresh, and full of flavour — and a delicious way to enjoy more fibre in every bite. Serve with a side salad, crispy fries, or sweet potato wedges for a complete meal. For a brunch twist, top with a fried or poached egg and enjoy café-style comfort at home.

Storage

Best enjoyed fresh and warm for the perfect crunch and flavour. If preparing ahead, cook the schnitzels and refrigerate separately for up to 2 days. Reheat in a hot oven (180°C for 8–10 minutes) to restore crispiness before assembling. Avoid storing assembled rolls, as the sauce and salad may soften the bread.
