Ham & Cheese Toastie with Cheddar and Dijon

Melted vintage cheddar, honey-roast ham and a touch of Dijon between slices of Wise Wheat Hi-Fibre White Loaf — high in fibre with no compromise on taste — create the perfect golden toastie moment.

Ingredients

4 slices Wise Wheat Hi-Fibre White Sliced Loaf (available at Woolworths stores with an in-store bakery)
2 tsp softened butter, plus extra for frying
2 tsp Dijon mustard
4 large slices honey-roast deli ham
One large zucchini, cut into ribbons
120g vintage cheddar cheese, sliced or grated
1 teaspoon thyme, finely chopped or dried

Method

  1. Butter each slice of bread and spread the Dijon mustard onto one of the buttered sides.
  2. Layer ham, zucchini ribbons, and cheddar on the mustard-coated slice.
  3. Add a sprinkle of thyme.
  4. Top the sandwich with the other slice.
  5. Heat a non-stick pan over medium and melt a little butter.
  6. Pan toast the sandwich for 2–3 minutes on each side, pressing gently with a spatula until golden brown and the cheese is melted.
  7. Slice and serve hot.
