| 2 tsp softened butter, plus extra for frying |
| 2 tsp Dijon mustard |
| 4 large slices honey-roast deli ham |
| One large zucchini, cut into ribbons |
| 120g vintage cheddar cheese, sliced or grated |
| 1 teaspoon thyme, finely chopped or dried |
Method
- Butter each slice of bread and spread the Dijon mustard onto one of the buttered sides.
- Layer ham, zucchini ribbons, and cheddar on the mustard-coated slice.
- Add a sprinkle of thyme.
- Top the sandwich with the other slice.
- Heat a non-stick pan over medium and melt a little butter.
