GREEN GODESS CHICKEN POPPYSEED BAGEL

The NY Bagels Poppyseed Bagel goes so well with grilled chicken and a tangy fresh green goddess herby slaw. This is the satisfying light lunch to keep you going in the middle of a busy day.

Ingredients

10 NY Bagels Poppyseed Bagels
50g baby spinach
¼ green cabbage, finely shredded
2 cucumbers, finely sliced
4 poached chicken breasts, shredded
Green Goddess Dressing:
combine in a blender 1 cup Greek yoghurt with ½ cup parsley leaves, 1 bunch chives, 2 tbsp olive oil, salt & pepper, and blend until smooth
Salt & Pepper to season

Method

  1. Slice NY Bagels and toast until golden.
  2. Top toasted bagel with baby spinach, cabbage, cucumber, shredded chicken and drizzle with Green Goddess Dressing and seasonings.
  3. Finish with bagel top and enjoy!
