Thick, fluffy and gently spiced with cinnamon and vanilla, these French-toast stacks made on Wise Wheat Hi-Fibre White Sliced Loaf are high in fibre and a source of protein, turning an everyday breakfast into café-style indulgence.

Ingredients

16 slices Wise Wheat Hi-Fibre White Sliced Loaf (available at Woolworths stores with an in-store bakery)
5-6 large eggs (use 5 for a lighter flavour and 6 for a richer flavour)
1 cup (250ml) cup milk
1 ¼ teaspoon vanilla extract
¾ teaspoon ground cinnamon
Pinch of salt
Butter, for cooking
270g vanilla yoghurt
Honey or Maple syrup, fresh fruit, powdered sugar or cinnamon sugar – for serving

Tools

  1. 8cm round cookie cutter

Method

  1. In a wide shallow dish, whisk together the eggs, milk, vanilla, cinnamon, and a pinch of salt until smooth.
  2. Heat a nonstick pan or griddle over medium heat and brush lightly with butter.
  3. Cut each slice with a round cookie cutter (8cm)
  4. Dip each slice of Wise Wheat Hi-Fibre White Sliced Loaf into the egg mixture, coating both sides evenly.
  5. Cook French Toast slices in the hot pan for approximately 3 minutes per side, or until golden and cooked through. Lower heat slightly if needed to prevent burning.
  6. Repeat in batches, brushing the pan with more butter as needed.
  7. Layer each round with berries and stack on top of each other.
  8. Sprinkle the top layer with berries, add a dollop of vanilla yoghurt.
  9. Serve warm with a generous drizzle of maple syrup, and a dusting of powdered sugar or cinnamon sugar.
