Crisp Coconut Cookies

Ingredients

450g Allied Pinnacle Self Raising Flour
125g Unsalted Butter
225g Caster Sugar
1 Egg
100g Desiccated Coconut
Pinch of salt & extra sugar

Method

  1. Preheat oven to 180°C or 160°C fan-forced. Grease and line 2 x baking trays.
  2. Place butter and sugar into a mixing bowl and using a handheld beater, mix on fast speed until light and creamy. Add in egg and mix on low speed until combined.
  3. Add in flour, salt and coconut and whisk on low speed until blended.
  4. Lightly coat some flour on your hands and using a spoon, spoon out some mixture and roll into a ball. Press flat between hands.
  5. Dip the top of the flattened dough into the sugar and place on baking tray. Allow room for spreading during the baking process.
  6. Bake for approximately 10-15 minutes.
