Ingredients
450g Allied Pinnacle Self Raising Flour |
125g Unsalted Butter |
225g Caster Sugar |
1 Egg |
100g Desiccated Coconut |
Pinch of salt & extra sugar |
Method
- Preheat oven to 180°C or 160°C fan-forced. Grease and line 2 x baking trays.
- Place butter and sugar into a mixing bowl and using a handheld beater, mix on fast speed until light and creamy. Add in egg and mix on low speed until combined.
- Add in flour, salt and coconut and whisk on low speed until blended.
- Lightly coat some flour on your hands and using a spoon, spoon out some mixture and roll into a ball. Press flat between hands.
- Dip the top of the flattened dough into the sugar and place on baking tray. Allow room for spreading during the baking process.
- Bake for approximately 10-15 minutes.
