Chocolate Chip Cookies

675g Allied Pinnacle Self Raising Flour
225g Caster Sugar
225g Brown Sugar
3 Eggs
250g Unsalted Butter
5g Vanilla Essence
225g Chocolate Chips


  1. Preheat oven to 180°C or 160°C fan-forced. Line a tray with baking paper.
  2. Place butter and sugars into a mixing bowl, mix on medium speed for approximately 5 minutes until the butter is light and fluffy.
  3. Mix in the eggs one at a time on a low speed. Mix until the mixture has all come together.
  4. Using a wooden spoon, stir in the flour vanilla essence and chocolate chips until a dough has formed.
  5. Roll balls out of the dough and place on a prepared baking tray. Press out slightly to flatten the ball and leave enough space on the tray for expansion during the baking process.
  6. Cook in the oven for approximately 15 minutes or until the cookies have started to brown. Cool on a wire rack before serving.
