675g Allied Pinnacle Self Raising Flour |
225g Caster Sugar |
225g Brown Sugar |
3 Eggs |
250g Unsalted Butter |
5g Vanilla Essence |
225g Chocolate Chips |
Method
- Preheat oven to 180°C or 160°C fan-forced. Line a tray with baking paper.
- Place butter and sugars into a mixing bowl, mix on medium speed for approximately 5 minutes until the butter is light and fluffy.
- Mix in the eggs one at a time on a low speed. Mix until the mixture has all come together.
- Using a wooden spoon, stir in the flour vanilla essence and chocolate chips until a dough has formed.
- Roll balls out of the dough and place on a prepared baking tray. Press out slightly to flatten the ball and leave enough space on the tray for expansion during the baking process.
- Cook in the oven for approximately 15 minutes or until the cookies have started to brown. Cool on a wire rack before serving.
