Carrot Cake

320g Allied Pinnacle Atta Flour
120g Brown Sugar
140mL Olive Oil
100g Golden Syrup
3 Eggs
1tsp Vanilla Essence
1tsp Bicarb Soda
1tsp All Spice
2 Grated Carrots


  1. Preheat oven to 170°C or 150°C fan-forced. Grease a 20cm cake tin and line with baking paper.
  2. Place brown sugar, oil, golden syrup, eggs and villa essence into a bowl and use a whisk to mix until combined.
  3. Sift Atta Flour, bicarb soda and cinnamon into a seperate large bowl.
  4. Pour the oil mixture into the dry ingredients and with a wooden spoon, stir gently until just combined.
  5. Stir in the grated carrot.
  6. Pour the mixture into prepared lined tin and bake for approximately 90 minutes. Let cake cool for 10 minutes before turning onto wire rack.
