4 rashers streaky bacon

40g fresh rocket leaves
Butter or oil, for cooking
4 sprigs of fresh coriander
Method
- Heat a nonstick pan over medium heat and cook the bacon until crispy. Set aside on a paper towel.
- In the same pan, fry the eggs sunny side up, add a swirl of crispy chilli oil to the egg white and fry to your liking.
- Slice the Wise Wheat Hi-Fibre Rolls in half and lightly toast if preferred.
- Layer with a small handful of rocket, then add the crispy bacon and top with the fried egg.
- Close the rolls and serve immediately.
Tips & Tricks
- Perfectly Crispy Bacon: For evenly cooked bacon, start with a cold pan and bring the heat up gradually — this renders the fat and gives that irresistible crunch without burning.
- Yolk Control: Prefer a runny centre? Fry the egg sunny-side up and cover briefly with a lid to set the whites. For firmer yolks, flip gently and cook for another 30 seconds.
- Add a Creamy Touch: Spread a thin layer of aioli or smashed avocado on the roll before stacking for extra flavour and richness.
Variations
- Sweet Heat: Drizzle with hot honey or chilli jam for a perfect balance of sweet, spicy, and savoury.
- Vegan Twist: Swap bacon for smoky tempeh, use a plant-based egg mixture and drizzle with vegan chilli crisp for a satisfying alternative.
- Cheesy Melt: Add a slice of cheddar or Swiss cheese under the egg for gooey indulgence.

Storage
Best enjoyed fresh off the pan for maximum crunch and runny-yolk perfection. Avoid storing assembled rolls, as the heat and moisture can soften the bread and wilt the greens.
