Bacon & Egg Roll with Chilli Crunch

Smoky bacon, runny yolks and a hit of chilli crisp come together using Wise Wheat Hi-Fibre Seeded Rolls — high in natural prebiotic fibre, a source of protein, and bursting with flavour in every bite.

Ingredients

1 pack of Wise Wheat Hi-Fibre Seeded Rolls (available at Woolworths stores with an in-store bakery)
4 rashers streaky bacon
2 large eggs
Teaspoon of crispy chilli oil (in Asian section)
40g fresh rocket leaves
Butter or oil, for cooking
4 sprigs of fresh coriander

Method

  1. Heat a nonstick pan over medium heat and cook the bacon until crispy. Set aside on a paper towel.
  2. In the same pan, fry the eggs sunny side up, add a swirl of crispy chilli oil to the egg white and fry to your liking. 
  3. Slice the Wise Wheat Hi-Fibre Rolls in half and lightly toast if preferred.
  4. Layer with a small handful of rocket, then add the crispy bacon and top with the fried egg.
  5. Close the rolls and serve immediately.
