Ingredients

500g Gluten Free Muffin Mix
100g Eggs (2 Eggs)
125mL Melted Butter (Unsalted)
250mL Milk
1 Banana (Mashed)

Method

  1. Preheat oven to 180°C. Grease a 26cm x 11cm loaf tin and line with baking paper.
  2. Place ingredients into mixing bowl, followed by the Gluten Free Muffin Mix. Using a beater attachment on an electric mixer, beat together on low speed until combined. Scrape bowl and beat on medium speed until everything is mixed.
  3. Add 1 mashed banana and combine.
  4. Pour mix into prepared tin.
  5. Bake for approximately 1 hour or until skewer comes out clean.
